Mud Crab


Scylla serrata (often called mud crab or mangrove crab, although both terms are highly ambiguous, as well as black crab) is an economically important species of crab found in the estuaries and mangroves of Africa, Australia and Asia. In their most common form, the shell colour varies from a deep, mottled green to very dark brown.

What Is Mud Crab ?

Mangrove crab or Mud Crab is a kind of crab that lives in the ecosystem of mangrove and estuary forests. Crabs that have significant economic value are found on the coastal coasts of Africa,  Asia and Australia. In English it is known as mangrove crab, mud crab, and also Indo-Pacific swamp crab. Scylla Serrata or also known as large mangrove crabs (giant mangrove crab, giant mud crab) is a widespread mangrove crab ranging from the beaches of East Asia, Southeast, South, to the Red Sea.

Mud Crab Facts

Mud crab will live in the mangrove for shelter, foraging, and growing. Mangrove crabs are mating in brackish waters (mangrove area) which then the female crab will do spawning in the ocean. After the eggs hatch, the early phase of mangrove crab called Zoea will live by following the flow of the coastal waters. When grow bigger we called it Megalopa, it will live in estuary (brackish) waters. After Megalopa, they will move to mangrove area and grow into young crabs. They feed themselves with those small animals/nutrients and slowly turn into an adult crab. Mud crab have a life cycle that can live life in various water conditions. By the time the new mangrove crabs hatch, sea temperatures generally range from 25 ° C – 27 ° C with salinity of 29 – 33 ppt. It has a fairly high vulnerability to coastal waters. At the time of mangrove crabs in the megalopa phase, it can tolerate low water salinity of 10 – 24 ppt with temperatures above 10 ° C. Mud crab can grow into very big with maximum width between 25-28 cm and weight reaching 2-3 kg. Mud Crab grow up by molted their old exoskeleton. During this period of time, we called it soft shell crab. The outer skin will be harden within 6 hours. During this molting period, Mud Crab body is filled with water. It need to take at least 1-2 weeks time before the body is filled with meat. The mud crab is not suitable for consumption as the body is full of water instead of meat. The chelipeds are large and sturdy, with two pointed spines on the outer side of the carpus (second segment, calculated from the base). The facial side of the carapace (frontal margin, between two eyes) is usually with sharp teeth. While living, the carapace is usually green, olive-green, almost black; while the outer sides of the pinched sleeve (claws) are green, often with a spotted pattern or spots. The last pair of legs (swimming legs) is also uneven spots, both in males and females. This species is the most widespread type of mangrove crab. Spread across coastal and estuarine waters in the Western Indo-Pacific, large mangroves are found to the west to South Africa; northward to Okinawa, Japan; eastward to Fiji and western Samoa in the Pacific; and southward to eastern Australia. These crabs are also found in the Philippines, and in Kupang. Compared with other types of mangrove crabs, Scylla Serrata is the most favored crab among consumers.

Best Months for Mud Crabs

Indonesia Mud Crabs are available throughout the whole year. This is due to wide spread geographical locations from Irian, Maluku, Sumatra, Java, Kalimantan to Sulawesi. Each of these provinces having their own season of mud crab.

The distribution factor of mangrove crab related to the reproductive cycle. For example in Java province Mayangan Beach. From June to October is the peak season of mangrove crab in the waters of Mayangan Beach.

Salted Egg Crab Recipe

1 kg of mangrove crab
4 salted eggs (yellow)
3 cloves of garlic
2 onions
1 tea spoon fish sauce
1 sachet of oyster sauce
2 tablespoons of butter
1 tea spoon taste soy sauce
A bit salt, sugar, pepper

Step by Step Instructions

Step 1:

Clean the crab, boil it around 10 minutes then take out and put it in a plate. After that, cut the claws and break the shell.

Step 2:

Chopped garlic, sliced onions, grab salted egg yolks, heat the oil, add butter and stir fry all the onions until fragrant. Add fish sauce, stir well, put the yellow salted egg inside the cooking pan. Put the crab, scrambled the yellow salted egg until it spread properly among the crabs. Put enough water and stir well.

Step 3:

Add oyster sauce, soy sauce, salt, sugar, pepper, stir well, cover the pan let stand until the water inside cooking pan reduced. Taste it and turn off the stove if it is ready.
